A signature dish, that is based on an old recipe of Castel Mimi’s proprietor family. The pâté is made of chicken liver and is baked directly in a glass jar, in which it will be served. It has a unique taste that comes from a secret ingredient, known only to handful of people. The pâté is served with homemade bread chips and sour pickles. We recommend this dish with Cabernet Sauvignon Rose.
COQ AU VIN
Even though it has a French name, this dish is also based on an old family recipe. The rooster is fried on the pen until it gets nice and brownish. Before the meat goes into the oven, vegetables are added with some white wine sauce. When the rooster is ready, it gets well-seasoned and drizzled in Castel Mimi red wine. We recommend this dish with Rosu de Bulboaca matured for 12 months in French Oak Barrels or with Malbec, matured for 18 months.
Moldovan Vineyard Snails
This course is prepared with snails that were farmed in the vineyards, and for this matter are considered to be the most delicious ones. The snails are served with a delicious butter sauce which contains garlic and herbs that were harvested in Castel Mimi’s backyard garden. We recommend to sprinkle the snails with some lemon juice and to soak some bread in the butter sauce, to fully enjoy this warm appetizer. We recommend this dish with a glass of fresh Fetească Albă.
White Owl is the only restaurant in Moldova that serves wild salmon exclusively. It has a finer taste, different color and is definitely healthier than farm-raised fish. It’s served with fresh pumpkin remoulade and mustard sous. It goes beautifully with a Sauvignon Blanc or a Codru PGI Pinot Gris.
The most known Moldovan dessert, traditionally prepared in the eve of important religious and family holidays. It is baked for 6 hours at low temperatures, and because of sugar caramelization the dessert acquires a tasty brownish color. We serve it with cream anglaise, plum and wine sauces. We recommend this dessert with Ice Wine.
